In my house we are certified tea lovers. I have a tea caddy, which overspills to an entire cupboard, brimming with all the variations of tea you could ever possibly need. Chai is my absolute favourite of them all, from Masala to vanilla spiced- I adore that warming taste that instantly takes me back to the flavours of India. In particular, I am the biggest fan of Drink Me Chai instant chai latte powders. They are the key in being able to re-create high end coffee bar style Chai Lattes in an instant, in the comfort of your own kitchen! I just can’t get enough of them, and decided to try my hand at baking with some to create a chai latte in cupcake form! It’s a total winner that will fill your home with the incredible spicy scent of chai and is without doubt one of the best cupcake recipes I’ve ever made- that frosting!!
You will need:
280g caster sugar
220g plain flour
80g unsalted butter, softened
2 large eggs
1 tablespoon baking powder
1/2 teaspoon vanilla extract
1/4 teaspoon salt
For the frosting:
450g icing sugar, sifted
160g unsalted butter, softened
1 teaspoon runny honey
Step 1. Pre heat your oven to 180 degrees and line a cupcake or muffin tin with cases. In a freestanding electric mixer or with a hand held whisk, on a low speed combine the butter, sugar, flour, baking powder, salt and chai tea latte powder until everything is well incorporated and resembles fine breadcrumbs.
Step 2. Put the milk and vanilla essence into a jug, then add the eggs and whisk everything together with a fork until well combined and smooth. Slowly pour it into your dry mixture with your mixer on a low speed, or a little at a time if using a hand held whisk. Once it has been added together , turn the speed to medium and mix until smooth and well combined.
Step 3. Spoon the batter into your lined cupcake or muffin tin, filling each case about 1/3. Bake in the pre heated oven for about 20 mins, until evenly golden on top and a skewer poked through comes out clean. Once ready, remove from the oven and set aside to cool.
Step 4. To make the delicious honey chai frosting, in a freestanding mixer of hand held whisk mix together your icing sugar, Drink Me Chai powder and softened butter until combined together.
Step 5. In a jug mix together the milk and runny honey and slowly pour into the mixture whilst mixing on a low speed. Once added, turn the speed of the mixer to medium until the frosting is smooth and fluffy.
Step 6. With a tablespoon, top each cupcake with a spoonful of frosting. Use a large palette knife to smooth the frosting around into a cone shape then give it a good swirl around the tip of the frosting cone to get a nice swirl on the cupcakes. Alternatively, you could pipe the frosting on with an icing nozzle!
Step 8. To finish, sprinkle a little dusting of Drink Me Chai powder on top for decoration. Enjoy with a chai latte for the most warming afternoon pick me up!
