The highly anticipated strawberry season is here once again. I got very excited when I spotted boxes of big juicy ones in my local farm shop the other day and couldn’t wait to make something with them! Baked oats make a great hearty and healthy weekend breakfast and the combination of fresh strawberries and coconut is the perfect taste of Summer!
To serve two you will need:
200ml milk (I used oat milk, but any will work)
1 tablespoon runny honey
5 large fresh strawberries
1 tablespoon desiccated coconut, plus extra to decorate
Step 1. Preheat the oven to 180 degrees and lightly grease your baking dish or separate dishes with a little coconut oil and place them on a baking tray. Chop your strawberries into pieces and place in the bottom of each dish, leaving some aside for the top.
Step 2. In a jug whisk together the eggs and milk, then add in the coconut, honey and oats giving the mixture a good stir to make sure everything is combined.
Step 3. Carefully pour or spoon the mixture into the prepared dishes. Once they are filled, top with the remaining chopped strawberries and a sprinkle of coconut. Place in the oven and bake for around 30 mins, until the top has turned golden.
Once ready serve immediately for the perfect weekend breakfast. Enjoy!
